  • 180 g Butter Ensure it’s at room temperature
  • 150 g Granulated Sugar
  • 150 g Dark Brown Sugar
  • 4 large Eggs Use room temperature
  • 330 g All-Purpose Flour
  • 1 tbsp Cornstarch
  • 1 tbsp Ground Cardamom
  • 1 tbsp Ground Cinnamon
  • 1.5 tsp Ground Ginger
  • 0.5 tsp Ground Allspice
  • 0.5 tsp Ground Nutmeg
  • 0.25 tsp Ground Black Pepper
  • 0.75 tsp Baking Powder
  • 0.75 tsp Baking Soda
  • 0.5 tsp Salt
  • 240 g Sour Cream Can substitute with Greek yogurt 1:1
  • 60 g Vegetable Oil Can use canola or another neutral oil
  • 1.5 tsp Vanilla Extract
For the Brown Sugar Cream Cheese Frosting
  • 200 g Butter Ensure it's softened
  • 280 g Powdered Sugar
  • 30 g Dark Brown Sugar
  • 115 g Full-Fat Cream Cheese
  • 0.5 tsp Vanilla Bean Paste

Method
 

Step-by-Step Instructions for Chai Cake
  1. Preheat your oven to 170ºC (340ºF) and line two 20 cm (8-inch) baking pans with parchment paper.
  2. In a large bowl, sift together the all-purpose flour, cornstarch, spices, baking powder, baking soda, and salt.
  3. Cream butter and sugars until light and fluffy for about 3 minutes.
  4. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Slowly add half of the dry mixture, then add sour cream, oil, and vanilla. Mix gently, followed by remaining dry ingredients.
  6. Divide batter between pans and bake for about 28-30 minutes.
  7. Let cakes cool in pans for 5 minutes, then transfer to a wire rack.
  8. Prepare frosting by creaming together butter, sugars and adding cream cheese and vanilla bean paste until smooth.
  9. Level cake layers if needed, frost between layers and around the cake, then dust with cinnamon if desired.
