Preparation Steps
- In a large mixing bowl, combine warm mashed potatoes with grated Parmesan cheese, minced garlic, salt and pepper. Stir until creamy and well blended.
- Crack an egg into the potato mixture and mix thoroughly until cohesively combined.
- Scoop portions of the potato mixture and roll into small balls about 1 inch in diameter. Place on a parchment-lined baking sheet.
- Pour bread crumbs into a shallow dish. Roll each potato ball in the bread crumbs until evenly coated.
- In a deep skillet, heat enough oil over medium heat to submerge the balls to about 350°F (175°C). Test with a small piece of potato mixture.
- Carefully add the potato balls to the oil in batches, frying for 3-4 minutes until golden brown and crispy.
- Remove the potato balls from the oil using a slotted spoon and place them on paper towels to drain excess grease.
