  • 1 cup Parmesan cheese grated

  • 1 large egg or flax egg for vegan

Method
 

Preparation Steps
  1. In a large mixing bowl, combine warm mashed potatoes with grated Parmesan cheese, minced garlic, salt and pepper. Stir until creamy and well blended.
  2. Crack an egg into the potato mixture and mix thoroughly until cohesively combined.
  3. Scoop portions of the potato mixture and roll into small balls about 1 inch in diameter. Place on a parchment-lined baking sheet.
  4. Pour bread crumbs into a shallow dish. Roll each potato ball in the bread crumbs until evenly coated.
  5. In a deep skillet, heat enough oil over medium heat to submerge the balls to about 350°F (175°C). Test with a small piece of potato mixture.
  6. Carefully add the potato balls to the oil in batches, frying for 3-4 minutes until golden brown and crispy.
  7. Remove the potato balls from the oil using a slotted spoon and place them on paper towels to drain excess grease.
