  • 1 tbsp baking powder fresh
  • 1 cup granulated sugar or brown sugar for caramel hint
  • 1/2 cup unsalted butter softened, or margarine
  • 3 large eggs free-range
  • 1 cup whole milk or almond/oat milk
For the Filling
  • 1 cup fresh strawberries or raspberries/blueberries
For the Topping
  • 1 cup heavy cream or coconut cream
  • 1 cup dark or white chocolate for coating

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C) and grease egg-shaped molds.
  2. In a large mixing bowl, whisk together flour, baking powder, and sugar.
  3. In another bowl, beat butter until creamy, add eggs one at a time, then mix in milk.
  4. Gently mix wet and dry ingredients until just combined, avoiding overmixing.
  5. Fill molds halfway with batter, add strawberries, then top with remaining batter.
  6. Bake for 20-25 minutes until golden, then let cool for 10 minutes before removing from molds.
  7. Beat heavy cream until soft peaks form and sweeten lightly if desired.
  8. Assemble by topping each cake with whipped cream and extra strawberry slices, optionally dipping in chocolate.
