Method
 

Step-by-Step Instructions
  1. Begin by pressing the super firm tofu for about 20 minutes to remove excess moisture, then slice into desired shapes.
  2. In a mixing bowl, combine cornstarch, nutritional yeast, salt, and ground black pepper. Toss the pressed tofu slices in this mixture until coated.
  3. Heat avocado oil in a large skillet over medium-high heat. Add coated tofu slices and fry for 3-4 minutes on each side until golden-brown.
  4. Reduce the heat to medium and sauté the minced garlic for about 1 minute until fragrant.
  5. Add chopped sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper into the skillet. Cook for another 2-3 minutes.
  6. Pour in vegetable broth, tomato paste, and cashew cream. Stir well, then add the chopped spinach and simmer for about 5 minutes.
  7. Gently mix in the chopped basil and return the crispy tofu to the skillet. Coat the tofu with the sauce.
