  • 3 cloves garlic minced
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons honey
  • 1/4 cup cilantro chopped
For the Skewers
  • 2 medium peaches cut into 1-inch pieces
  • 2 medium jalapeños seeded and cut into chunks
  • 5 each wooden skewers soaked in water
Optional Toppings
  • 2 tablespoons chopped green onions for garnish
  • 1/4 cup feta cheese crumbled

Equipment

  • Grill
  • mixing bowl
  • cutting board
  • knife
  • wooden skewers

Method

Step-by-Step Instructions
  1. Begin by cutting the boneless, skinless chicken breasts, juicy peaches, and spicy jalapeños into equal-sized pieces, about 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
  2. In a mixing bowl, combine olive oil, minced garlic, lime juice, honey, and chopped cilantro to create a flavorful marinade. Whisk vigorously until all ingredients are well blended.
  3. Add the chicken pieces to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 30 minutes.
  4. Once marinated, it's time to assemble your skewer. Thread the marinated chicken, pieces of peach, and jalapeños onto the soaked skewers, alternating the ingredients.
  5. While assembling the skewers, preheat your grill to high heat, around 500°F.
  6. Place the assembled skewers on the hot grill. Grill for approximately 8-10 minutes, turning them halfway through.
  7. Remove the skewers from the grill once fully cooked, and let them rest for a couple of minutes.
