  • 2 tablespoons Apple Cider Vinegar Can swap with white vinegar
  • 1/4 cup Water
  • 1 tablespoon Cornstarch Whisk well to avoid lumps
For Seasoning
  • 1 teaspoon Salt Adjust according to taste
  • 1/2 teaspoon Black Pepper Freshly ground is best

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken breasts for 3-4 minutes on each side until golden-brown.
  5. In the same skillet, cook diced jalapenos and peaches for about 2-3 minutes until softened.
  6. Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
  7. Pour the glaze mixture over the jalapenos and peaches, and simmer for 2-3 minutes.
  8. Return the seared chicken to the skillet, spooning the sauce over it.
  9. Bake in the oven for 20-25 minutes until chicken reaches 165°F (74°C).
  10. Let the chicken rest for a few minutes before serving.
