- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden-brown.
- In the same skillet, cook diced jalapenos and peaches for about 2-3 minutes until softened.
- Whisk together honey, apple cider vinegar, water, and cornstarch in a bowl until smooth.
- Pour the glaze mixture over the jalapenos and peaches, and simmer for 2-3 minutes.
- Return the seared chicken to the skillet, spooning the sauce over it.
- Bake in the oven for 20-25 minutes until chicken reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
