Ingredients
  

Ice Cream Base
  • 2 cups Heavy Cream Swap for coconut cream for dairy-free
  • 1 cup Granular Sugar Substitute Erythritol or stevia are great options
  • 1 cup Sugar-Free White Chocolate Baking Chips Dark chocolate chips can be used
  • 4 large Egg Yolks Should be tempered slowly
Raspberry Swirl
  • 2 cups Frozen Raspberries Fresh raspberries can be used when in season
  • 2 tablespoons Sweetener Adjust sweetness as needed
  • 1 teaspoon Xanthan Gum Used as a thickener

Method
 

Ice Cream Preparation
  1. In a medium saucepan, combine 2 cups of heavy cream and 1 cup of granular sugar substitute over medium heat, stirring continuously until hot but not boiling.
  2. Whisk 4 egg yolks until pale, gradually add hot cream to temper, then combine back with cream in the saucepan.
  3. Add 1 cup of sugar-free white chocolate baking chips to the custard over low heat, stirring until melted and smooth.
  4. Remove from heat and cool the mixture, then refrigerate for at least 4 hours.
  5. For the raspberry swirl, heat 2 cups of frozen raspberries with 2 tablespoons of sweetener until thickened, then whisk in 1 teaspoon of xanthan gum.
  6. Churn the chilled cream mixture in an ice cream maker according to the manufacturer's instructions.
  7. Layer the churned ice cream with the raspberry swirl in a freezer-safe container, then freeze overnight.
