  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan lined with parchment paper.
  2. In a bowl, whisk together the flour, powdered sugar, and salt. Cut in the butter until it resembles coarse crumbs. Press firmly into the bottom of the pan.
  3. Bake the crust for 15–20 minutes until lightly golden. The crust should be firm.
  4. Combine granulated sugar, lavender buds, and water in a saucepan. Simmer until sugar dissolves, then steep for 10 minutes and strain.
  5. In a large bowl, whisk the eggs, then add the lavender syrup, lemon juice, lemon zest, powdered sugar, and flour. Mix until smooth.
  6. Pour the filling over the baked crust and bake for another 20–25 minutes. The edges should be set with a slight jiggle in the center.
  7. Let cool on a wire rack for 30 minutes, then refrigerate for at least 2 hours before slicing.
