Ingredients
  

For the Salad
  • 2 cups Pasta Feel free to swap for quinoa or gluten-free pasta.
  • 1 cup Cherry Tomatoes Substitute with halved grape tomatoes if needed.
  • 1 medium Zucchini You can also use yellow squash or bell peppers.
  • 3 cups Fresh Spinach Arugula is a great alternative if you prefer a peppery bite.
  • 1 cup Artichoke Hearts Sun-dried tomatoes make a tasty substitute if unavailable.
  • 1/2 medium Red Onion Try shallots for a milder flavor.
For the Dressing
  • 1 cup Plain Unsweetened Plant-Based Yogurt Forager Project or Silk's Soy yogurt work well.
  • 1/4 cup Fresh Lemon Juice Bottled juice lacks the freshness of the real thing.
  • 2 tablespoons Miso Paste Swap with nutritional yeast for a different twist.
  • 1/4 cup Fresh Basil Feel free to experiment with other herbs.

Method
 

Preparation Steps
  1. Start by washing and slicing the zucchini into half-moons. Sprinkle a pinch of salt over the slices and let them sit for about 15 minutes.
  2. Fill a large pot with water, add a generous amount of salt, and bring it to a boil. Cook your choice of pasta until al dente, about 8-10 minutes. Drain and rinse under cold water.
  3. In a large mixing bowl, combine the cooled pasta with fresh spinach and chopped artichoke hearts. Toss to mix.
  4. In a medium skillet, heat olive oil over medium heat. Add sliced red onion and sauté for 5 minutes until softened.
  5. In the same skillet, add the salted zucchini slices cut-side down and lemon wedges. Cook for about 3-4 minutes on each side until golden.
  6. In a blender, combine fresh basil, lemon zest, minced garlic, pepitas, plant-based yogurt, miso paste, and olive oil. Blend until smooth.
  7. Pour half of the creamy dressing over the pasta mixture and toss to combine.
  8. Chill the prepared salad in the refrigerator for at least 30 minutes before serving.
