Preparation
- Preheat the oven to 400°F (200°C).
- In a large skillet, cook ground beef over medium-high heat with chili powder, ground cumin, oregano, salt, and pepper for 5-7 minutes.
- Slice the bell peppers in halves or quarters lengthwise and arrange cut-side up on a baking sheet.
- Spoon the cooked ground beef mixture into each bell pepper half and sprinkle with sharp cheddar cheese.
- Bake in the preheated oven for 5-7 minutes until cheese is melted and peppers are tender.
- Garnish with cherry tomatoes, jalapeños, and cilantro. Serve with sour cream and guacamole.
