Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a medium baking dish.
  2. In a large skillet over medium heat, warm olive oil, sauté minced garlic for 1 minute, then add cherry tomatoes and spinach, cooking for 2-3 minutes.
  3. Add heavy cream, cream cheese, grated Parmesan, Italian seasoning, and paprika to the skillet. Stir and simmer for 3-4 minutes until the sauce thickens.
  4. Layer shrimp in the greased baking dish, season with salt and pepper, and pour the cream sauce over.
  5. Sprinkle mozzarella cheese on top and bake uncovered for 12-15 minutes, until shrimp are pink and cheese is bubbly.
  6. Garnish with chopped parsley and serve hot.
