- Begin by peeling and thinly slicing the ripe mangoes, followed by finely slicing the red onion, chopping the cucumber, and dicing the red bell pepper into bite-sized pieces. Halve the cherry tomatoes and set all ingredients aside in separate bowls.
- In a medium bowl, whisk together the fresh lime juice, honey, olive oil, and a pinch of salt and black pepper until well-blended.
- In a large mixing bowl, layer the sliced mango, red onion, cucumber, diced red bell pepper, and halved cherry tomatoes. Add the chopped cilantro and mint, then gently toss to combine.
