Method
 

Preparation
  1. Begin by peeling and thinly slicing the ripe mangoes, followed by finely slicing the red onion, chopping the cucumber, and dicing the red bell pepper into bite-sized pieces. Halve the cherry tomatoes and set all ingredients aside in separate bowls.
  2. In a medium bowl, whisk together the fresh lime juice, honey, olive oil, and a pinch of salt and black pepper until well-blended.
  3. In a large mixing bowl, layer the sliced mango, red onion, cucumber, diced red bell pepper, and halved cherry tomatoes. Add the chopped cilantro and mint, then gently toss to combine.
  4. Pour the lime dressing over the salad mixture and gently toss until all ingredients are coated.
  5. Cover the salad and refrigerate for at least 15 minutes to allow the flavors to meld.
  6. Before serving, toss the salad again and transfer to a serving bowl.
