Ingredients
  

For the Chicken
  • 1 pound Chicken Breasts Substitute with chicken thighs for added moisture
  • 2 tablespoons Dijon Mustard Whole grain mustard can be used
  • 2 tablespoons Pure Maple Syrup Honey or agave syrup can be used, honey is non-vegan
For the Sweet Potatoes
  • 2 medium Sweet Potatoes Can be replaced with butternut squash
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 teaspoon Garlic Powder Can substitute with fresh minced garlic (1 clove = 1/8 tsp)
  • 1 teaspoon Onion Powder Can substitute with diced fresh onion (1 tsp = 1/2 medium onion)
  • 1 teaspoon Smoked Paprika Regular paprika can be used for less smoky flavor
  • to taste Salt Adjust to personal taste
  • to taste Pepper Adjust to personal taste
For Assembly
  • 2 cups Fresh Spinach Can substitute with other leafy greens like arugula
  • 1/4 cup Chopped Fresh Parsley Optional for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss cubed sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread seasoned sweet potatoes onto a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway.
  4. In a skillet over medium-high heat, cook seasoned diced chicken for 6-8 minutes until browned and cooked through.
  5. In the same skillet, whisk together Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper, simmering for 2-3 minutes.
  6. Return the cooked chicken to the skillet, stirring to coat with the sauce and cook for an additional 2-3 minutes.
  7. Assemble the bowls with roasted sweet potatoes, coated chicken, and fresh spinach.
  8. Drizzle any remaining sauce over the bowls and garnish with parsley, if desired.
