Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1-inch chunks, toss with olive oil, salt, pepper, and smoked paprika. Spread evenly on a sheet pan.
  3. In a bowl, whisk together the pure maple syrup, salt, and spices for the glaze.
  4. Place chicken thighs on top of sweet potatoes, press down, and brush with maple glaze, reserving some for basting.
  5. Bake for 35 to 40 minutes, basting halfway, until chicken reaches 165°F (75°C) and sweet potatoes are tender.
  6. After baking, let rest, then garnish with fresh herbs and serve directly from the pan.
