Marinating and Cooking
- In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, cumin, paprika, salt, and pepper until combined. Add chicken, coat well, cover, and refrigerate for 1 hour.
- While the chicken marinates, combine Greek yogurt, feta, grated cucumber, dill, mint, lemon juice, salt, and pepper in a bowl. Stir until smooth and creamy. Chill until ready to serve.
- Preheat grill or grill pan over medium-high heat. Remove chicken from fridge and grill for 6-7 minutes on each side until cooked through. Let rest for 5 minutes.
- Lightly grill pita bread for about 1 minute on each side until warmed and slightly toasty.
- Slice the chicken into strips and place on warmed pita. Drizzle tzatziki over, add vegetables, and wrap pita around fillings.
