Ingredients
  

Chicken Marinade
  • 1/4 cup Olive Oil Avocado oil makes a lighter alternative.
  • 3 cloves Minced Garlic Fresh is best, garlic powder works in a pinch.
  • 1/4 cup Lemon Juice Fresh is superior, bottled is a good backup.
  • 1 tbsp Dried Oregano Fresh oregano elevates the flavor.
  • 1 tsp Ground Cumin Ground coriander can be a substitute.
  • 1 tsp Paprika Smoked paprika brings a smoky flavor.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 4 pieces Chicken Breasts Chicken thighs can be substituted.
Tzatziki Sauce
  • 1 cup Greek Yogurt Sour cream can be a tasty alternative.
  • 1/2 cup Feta Cheese Opt for low-fat feta or omit for lighter option.
  • 1 cup Grated Cucumber Use zucchini if cucumber isn't available.
  • 1 tbsp Fresh Dill Dried herbs can substitute but will change taste.
  • 1 tbsp Fresh Mint
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tsp Pepper
Assembly
  • 4 pieces Pita Bread Gluten-free wraps can be used if necessary.
  • 1 medium Red Onion Sliced.
  • 2 medium Tomatoes Diced.
  • 2 cups Lettuce Chopped.

Method
 

Marinating and Cooking
  1. In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, cumin, paprika, salt, and pepper until combined. Add chicken, coat well, cover, and refrigerate for 1 hour.
  2. While the chicken marinates, combine Greek yogurt, feta, grated cucumber, dill, mint, lemon juice, salt, and pepper in a bowl. Stir until smooth and creamy. Chill until ready to serve.
  3. Preheat grill or grill pan over medium-high heat. Remove chicken from fridge and grill for 6-7 minutes on each side until cooked through. Let rest for 5 minutes.
  4. Lightly grill pita bread for about 1 minute on each side until warmed and slightly toasty.
  5. Slice the chicken into strips and place on warmed pita. Drizzle tzatziki over, add vegetables, and wrap pita around fillings.

Notes
