Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, add diced boneless, skinless chicken breasts and sliced medium zucchinis.
- Drizzle with olive oil and add minced garlic, lemon juice, dried oregano, dried basil, salt, and black pepper. Thoroughly coat all ingredients.
- Spread the seasoned chicken and zucchini mixture evenly in a 9x13-inch baking dish.
- Sprinkle a generous layer of shredded mozzarella and grated Parmesan cheese over the chicken and zucchini mixture.
- Place the baking dish in the preheated oven and bake uncovered for 25-30 minutes.
- Once out of the oven, let it rest for a few minutes and garnish with freshly chopped parsley.
