Ingredients
  

For the Chicken and Vegetables
  • 1 pound Boneless, Skinless Chicken Breasts Chicken thighs can also be used for extra tenderness
  • 2 medium Zucchinis Yellow squash can substitute for zucchini
  • 2 tablespoons Olive Oil Avocado oil can be used for a different flavor
  • 2 cloves Garlic (minced) Fresh is preferred, though garlic powder can be a backup
  • 2 tablespoons Lemon Juice Lime juice works as a substitute
For the Seasoning
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil Fresh herbs can replace them (use three times the amount)
  • to taste Salt
  • to taste Black Pepper
For the Cheesy Topping
  • 1 cup Shredded Mozzarella or Italian Cheese Blend Feta cheese offers a tangy alternative
  • 1/2 cup Grated Parmesan Cheese Nutritional yeast can provide a similar taste for dairy-free options
For Garnish
  • 1/4 cup Fresh Parsley (chopped) Fresh basil or cilantro can also be used

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, add diced boneless, skinless chicken breasts and sliced medium zucchinis.
  3. Drizzle with olive oil and add minced garlic, lemon juice, dried oregano, dried basil, salt, and black pepper. Thoroughly coat all ingredients.
  4. Spread the seasoned chicken and zucchini mixture evenly in a 9x13-inch baking dish.
  5. Sprinkle a generous layer of shredded mozzarella and grated Parmesan cheese over the chicken and zucchini mixture.
  6. Place the baking dish in the preheated oven and bake uncovered for 25-30 minutes.
  7. Once out of the oven, let it rest for a few minutes and garnish with freshly chopped parsley.
