  • 1 lb Sirloin Steak or flank/skirt steak
  • ¼ cup Olive Oil or avocado oil
  • 4 cloves Garlic minced
  • 1 tbsp Lemon Juice or vinegar
  • 1 tsp Dried Oregano
  • ½ tsp Dried Thyme

For the Bowl Base

  • 1 cup Cherry Tomatoes halved

  • ½ cup Kalamata Olives
  • ½ cup Feta Cheese optional
  • ¼ cup Fresh Herbs such as Parsley or Dill
For the Tzatziki
  • 1 cup Greek Yogurt or dairy-free yogurt
  • ½ cup Grated Cucumber squeezed dry
  • ½ tbsp Honey optional
For the Vinaigrette
  • ¼ cup Olive Oil
  • 1 tbsp Honey optional
  • 1 tbsp Dried Oregano

Step-by-Step Instructions
  1. Prepare the Marinade: In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, dried thyme, and season with salt and pepper. Marinate the steak for at least 30 minutes.
  2. Make the Tzatziki: Combine Greek yogurt, grated cucumber, lemon juice, minced garlic, and fresh dill in a bowl. Season with salt and pepper. Mix well and chill.
  3. Prepare the Vinaigrette: Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, and season with salt and pepper. Set aside.
  4. Cook the Steak: Heat a skillet over medium-high heat. Remove steak from marinade and cook for 4-5 minutes per side, until browned and reaching an internal temperature of 135°F for medium-rare. Let rest before slicing.
  5. Assemble Your Bowl: Start with cooked grains, layer sliced steak, and top with cherry tomatoes, cucumber, red onion, olives, chickpeas, feta, tzatziki, and vinaigrette.
