- Preheat a non-stick skillet or grill pan over medium heat for about 5 minutes. While warming up, wrap tortillas in a damp paper towel and microwave for 10-15 seconds.
- In a mixing bowl, combine the cooked chicken, shredded mozzarella, shredded cheddar, softened cream cheese, minced garlic, chopped parsley, salt, and pepper. Mix thoroughly.
- Lay one warmed tortilla flat and place about 1/2 cup of chicken mixture in the center. Roll the tortilla tightly, tucking in the sides.
- Drizzle olive oil into the skillet and coat the surface. Place wraps seam-side down and cook for 2-3 minutes until golden brown.
- Flip the wraps carefully and cook the other side for another 2-3 minutes until heated through and golden.
- Slice each wrap in half diagonally and serve hot, optionally garnished with extra parsley.
