Method
 

Step-by-Step Instructions
  1. Preheat a non-stick skillet or grill pan over medium heat for about 5 minutes. While warming up, wrap tortillas in a damp paper towel and microwave for 10-15 seconds.
  2. In a mixing bowl, combine the cooked chicken, shredded mozzarella, shredded cheddar, softened cream cheese, minced garlic, chopped parsley, salt, and pepper. Mix thoroughly.
  3. Lay one warmed tortilla flat and place about 1/2 cup of chicken mixture in the center. Roll the tortilla tightly, tucking in the sides.
  4. Drizzle olive oil into the skillet and coat the surface. Place wraps seam-side down and cook for 2-3 minutes until golden brown.
  5. Flip the wraps carefully and cook the other side for another 2-3 minutes until heated through and golden.
  6. Slice each wrap in half diagonally and serve hot, optionally garnished with extra parsley.
