- Spread a generous layer of butter on one side of each slice of sourdough bread.
- In a non-heated skillet, place half of the sourdough slices butter side down. Start layering with mozzarella, pesto, optional sun-dried tomatoes, and another slice of mozzarella. Top with another slice of bread, butter side up.
- Transfer the skillet to medium-low heat. Press down gently on the sandwiches. Cook for 3-4 minutes until golden brown.
- Carefully flip each sandwich and cook for another 3-4 minutes until the second side is golden brown and cheese is melted.
