Method
 

Preparing the Appetizer
  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with foil and place an oven-safe rack on top.
  2. In a medium bowl, mix together brown sugar, black pepper, water, and cayenne pepper until well combined. Coat each slice of thick-cut bacon, then lay on the prepared rack.
  3. Bake for 15 minutes, flip the bacon, and bake for another 10-15 minutes until crispy and golden.
  4. Remove the bacon and place on a paper towel-lined plate to absorb excess grease.
  5. Raise the oven temperature to 425°F (220°C). Slice the baguette, brush lightly with olive oil, season with salt and pepper, and bake for 7-10 minutes until golden brown.
  6. On a serving platter, place the log of goat cheese and press the candied bacon pieces into it. Drizzle with maple syrup, honey, or hot honey, and serve with crostini.
