Preparing the Appetizer
- Preheat your oven to 350°F (175°C). Line a large baking sheet with foil and place an oven-safe rack on top.
- In a medium bowl, mix together brown sugar, black pepper, water, and cayenne pepper until well combined. Coat each slice of thick-cut bacon, then lay on the prepared rack.
- Bake for 15 minutes, flip the bacon, and bake for another 10-15 minutes until crispy and golden.
- Remove the bacon and place on a paper towel-lined plate to absorb excess grease.
- Raise the oven temperature to 425°F (220°C). Slice the baguette, brush lightly with olive oil, season with salt and pepper, and bake for 7-10 minutes until golden brown.
- On a serving platter, place the log of goat cheese and press the candied bacon pieces into it. Drizzle with maple syrup, honey, or hot honey, and serve with crostini.

Notes
Using thick-cut bacon provides maximum flavor. Keep a close watch on the bacon as it bakes to prevent burning.
