Preparation
- Begin by patting the chicken thighs dry with a paper towel. Rub with salt, black pepper, and lime juice, ensuring each piece is well coated.
- In a large mixing bowl, combine the yogurt, cayenne pepper, garlic powder, ginger powder, ground cumin, ground coriander, and lime juice. Stir until smooth.
- Add chicken thighs to the marinade, making sure they are fully coated. Cover and refrigerate for 6 to 24 hours.
- Preheat the oven to broil or 450°F (232°C). Position the oven rack about 6 inches from the heat.
- Line a baking sheet with aluminum foil and place a wire rack on top. Arrange marinated chicken on the rack.
- Broil the chicken for 15-20 minutes, flipping halfway through, until cooked and slightly charred.
- Check the internal temperature, which should reach at least 165°F (74°C). Continue broiling in 2-minute intervals if needed.
- Let the chicken rest for a few minutes before serving with mint yogurt sauce or naan.
