Method
 

Preparation
  1. Begin by patting the chicken thighs dry with a paper towel. Rub with salt, black pepper, and lime juice, ensuring each piece is well coated.
  2. In a large mixing bowl, combine the yogurt, cayenne pepper, garlic powder, ginger powder, ground cumin, ground coriander, and lime juice. Stir until smooth.
  3. Add chicken thighs to the marinade, making sure they are fully coated. Cover and refrigerate for 6 to 24 hours.
  4. Preheat the oven to broil or 450°F (232°C). Position the oven rack about 6 inches from the heat.
  5. Line a baking sheet with aluminum foil and place a wire rack on top. Arrange marinated chicken on the rack.
  6. Broil the chicken for 15-20 minutes, flipping halfway through, until cooked and slightly charred.
  7. Check the internal temperature, which should reach at least 165°F (74°C). Continue broiling in 2-minute intervals if needed.
  8. Let the chicken rest for a few minutes before serving with mint yogurt sauce or naan.
