  • 1 cup Whipped Ricotta Can substitute with vegan ricotta.
  • 2 cloves Garlic Fresh chopped garlic is recommended.
  • 1/4 teaspoon Crushed Red Pepper Optional for heat.
  • 8 oz Mozzarella Cheese Vegan cheese works great too.
  • 1 tablespoon Fresh Thyme Dried thyme can be used in smaller amounts.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 475°F (245°C) and place a 12-inch cast-iron skillet inside to heat.
  2. Sauté sliced baby Bella mushrooms in olive oil over medium heat for about 5 minutes, seasoning with salt and black pepper.
  3. Mix whipped ricotta, chopped garlic, crushed red pepper, and more salt in a bowl; set aside.
  4. Roll out the rested pizza dough to about ¼ inch thick on a floured surface.
  5. Remove the hot skillet, brush with olive oil, and stretch the dough into it. Top with sautéed mushrooms, ricotta mixture, and mozzarella.
  6. Bake for approximately 9 minutes until the crust is golden and cheese is bubbling. Optionally broil for an additional 2.5 minutes.
  7. Lift the pizza from the skillet, cool for a minute, slice, and serve warm.

Notes
