- In a large bowl, combine 2 cups of Flahavan's rolled oats, 1 cup of milk, 1/4 cup of molasses, and 1/2 cup of vegetable oil. Mix well and let sit for about 15 minutes.
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
- In a medium bowl, whisk together 1 3/4 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt.
- In a large mixing bowl, beat 1/2 cup of softened unsalted butter with 1 cup of granulated sugar and 1/2 cup of light brown sugar until fluffy. Add 1 tablespoon of vanilla bean paste and then 2 large eggs, one at a time.
- Alternate adding the dry ingredient mixture and soaked oatmeal mixture to the butter mixture until fully incorporated.
- Divide the batter between the prepared cake pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Once the layers are cool, whip 1 cup of unsalted butter until light. Gradually add in 4 cups of confectioners' powdered sugar, 1 tablespoon of vanilla bean paste, and 1/4 cup of heavy whipping cream until smooth.
- Combine the frosting with 1 cup of marshmallow creme until uniform.
- Level the cooled cake layers and assemble by spreading marshmallow filling between layers.
- Apply a crumb coat with the remaining frosting and chill for 30 minutes. Then frost the entire cake.
- Garnish with decorative swirls of frosting and pieces of oatmeal cream pies on top.
