Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking pan with parchment paper.
  2. In a large mixing bowl, combine 2 cups of flour, 1/2 cup of granulated sugar, 1/4 cup of brown sugar, 1 teaspoon of baking powder, and a pinch of salt. Whisk together until well combined.
  3. Add 1/2 cup of melted butter, 1 large egg, and 1 teaspoon of vanilla extract. Stir until the mixture resembles wet sand.
  4. Press about two-thirds of the mixture into the bottom of the prepared pan and bake for 10-12 minutes until slightly golden.
  5. In a separate bowl, mix 2 cups of diced fresh peaches with 1/4 cup of sugar, 1 tablespoon of cornstarch, 1 tablespoon of lemon juice, and 1 teaspoon of cinnamon.
  6. Spread the peach filling evenly over the baked crust.
  7. Crumble the remaining dough over the peach filling, ensuring even distribution.
  8. Bake for an additional 35-40 minutes until the topping is golden brown and the filling is bubbly.
  9. Allow the bars to cool in the pan for at least 30 minutes.
  10. Lift out using the parchment overhang, cool completely on a wire rack, slice into squares, and serve.
