- In a mixing bowl, combine 1 cup of cottage cheese, 2 tablespoons of olive oil, and 1 beaten egg. Blend until smooth.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt.
- Gradually add the dry mixture into the wet ingredients. Stir gently until a soft dough begins to form.
- Fold in 1 cup of finely chopped baby spinach and ½ cup of shredded mozzarella cheese into the dough.
- On a lightly floured surface, divide the dough and form it into bagel-like shapes with a hole in the center.
- Preheat your oven to 400°F (200°C). Place the baking sheet in the oven and bake for about 15 minutes.
- Remove from the oven and let the flagels cool slightly on a wire rack before serving.
