  • 1/2 cup Mayonnaise or avocado for dairy-free
  • 1 tablespoon Yellow Mustard
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper adjust to taste
  • 1/4 teaspoon Paprika smoked is preferable
  • a few drops Orange Food Coloring optional for color
For Decoration
  • 2 tablespoons Chives finely chopped
  • 1 teaspoon Additional Paprika for garnish

Method
 

Step-by-Step Instructions
  1. Boil 6 large eggs in a medium saucepan, cover with cold water, bring to a boil, remove from heat, cover, and let sit for 10 minutes.
  2. Prepare an ice bath in a large bowl. Once the eggs sit for 10 minutes, transfer them to the ice bath for 5 minutes.
  3. Peel each egg under cold running water to keep the egg whites intact.
  4. Slice the peeled eggs in half, scoop yolks into a bowl, and mash with mayonnaise, mustard, salt, pepper, and paprika until smooth.
  5. Add orange food coloring to the yolk mixture and mix until evenly colored.
  6. Pipe the filling into each egg white half, creating a pumpkin shape.
  7. Create ridges with a knife/toothpick and insert chives for stems. Sprinkle additional paprika for garnish.
  8. Chill the decorated eggs in the fridge for at least 30 minutes before serving.
