- Start by washing your fresh cucumbers and sweet peppers under cold running water. Slice the cucumbers into thin rounds and cut the sweet peppers into thin strips.
- In a small bowl, whisk together ¼ cup of olive oil, 2 tablespoons of apple cider vinegar, the juice of half a lemon, and 1 tablespoon of honey. Whisk until smooth.
- In a large mixing bowl, add the sliced cucumbers, sweet pepper strips, and thinly sliced red onion. Gently toss the vegetables together.
- Pour the prepared dressing over the vegetables and toss until evenly coated.
- Sprinkle fresh dill over the top of the salad and toss gently again.
- Cover the bowl and refrigerate for at least 15 minutes to allow flavors to meld.
