Method
 

Step-by-Step Instructions
  1. Start by washing your fresh cucumbers and sweet peppers under cold running water. Slice the cucumbers into thin rounds and cut the sweet peppers into thin strips.
  2. In a small bowl, whisk together ¼ cup of olive oil, 2 tablespoons of apple cider vinegar, the juice of half a lemon, and 1 tablespoon of honey. Whisk until smooth.
  3. In a large mixing bowl, add the sliced cucumbers, sweet pepper strips, and thinly sliced red onion. Gently toss the vegetables together.
  4. Pour the prepared dressing over the vegetables and toss until evenly coated.
  5. Sprinkle fresh dill over the top of the salad and toss gently again.
  6. Cover the bowl and refrigerate for at least 15 minutes to allow flavors to meld.
  7. Toss the salad again before serving in a beautiful bowl.
