- Peel your sweet potatoes and slice them into ½-inch thick rounds. Place them in a large mixing bowl.
- Drizzle the sweet potato rounds with olive oil and sprinkle in salt, black pepper, and smoked paprika. Toss until evenly coated.
- Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet.
- Roast the sweet potato rounds for 25–30 minutes, turning them halfway through.
- Allow them to cool slightly after removing from oven.
- Transfer the rounds to a serving platter, sprinkle with crumbled feta, and drizzle with honey.
- Garnish with freshly chopped parsley and serve warm or at room temperature.
