  • 4 pieces Bone-In Chicken Thighs
  • 2 tablespoons Olive Oil for searing
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Aromatics
  • 1 medium Red Onion sliced
  • 2 cloves Garlic minced
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
For the Sauce
  • 1 cup Apple Cider
  • 1 cup Chicken Broth or White Wine
  • 2 tablespoons Salted Butter
  • 2 tablespoons Dijon Mustard
For the Seasonings
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Fresh Thyme or dried
  • 1 tablespoon Fresh Rosemary or dried
For the Apples
  • 2 medium Honeycrisp Apples sliced

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with onion powder, garlic powder, smoked paprika, thyme, rosemary, salt, and pepper.
  3. Sear the chicken thighs skin-side down in a skillet with olive oil for 5-7 minutes.
  4. Flip the chicken and add sliced red onion and Honeycrisp apples, sauté for 3-4 minutes.
  5. Whisk apple cider, chicken broth, Dijon mustard, and minced garlic, then pour over the chicken in the skillet.
  6. Transfer the skillet to the oven and roast for 25-30 minutes until the chicken reaches 165°F (74°C).
  7. Remove from the oven and serve warm, optionally reducing the sauce on the stovetop.
