- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with onion powder, garlic powder, smoked paprika, thyme, rosemary, salt, and pepper.
- Sear the chicken thighs skin-side down in a skillet with olive oil for 5-7 minutes.
- Flip the chicken and add sliced red onion and Honeycrisp apples, sauté for 3-4 minutes.
- Whisk apple cider, chicken broth, Dijon mustard, and minced garlic, then pour over the chicken in the skillet.
- Transfer the skillet to the oven and roast for 25-30 minutes until the chicken reaches 165°F (74°C).
- Remove from the oven and serve warm, optionally reducing the sauce on the stovetop.
