For the Salmon Balls
  • 1 lb Fresh Salmon
  • 1 cup Breadcrumbs Panko for extra crunch
  • 1 large Egg or flaxseed/chia egg for vegan
  • 1/4 cup Chopped Herbs fresh parsley or dill
  • 2 tbsp Lemon Juice or lime juice
  • 1 tsp Garlic Powder or fresh minced garlic
  • to taste Salt & Pepper
For the Creamy Avocado Sauce
  • 2 ripe Avocados or dairy-free yogurt
  • 1/2 cup Greek Yogurt or sour cream/dairy-free version

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Flake the fresh salmon into small pieces in a large bowl.
  3. Add breadcrumbs, egg, chopped herbs, lemon juice, garlic powder, salt, and pepper to the salmon, and mix until well combined.
  4. Wet your hands and roll the mixture into balls about 1 inch in diameter.
  5. Arrange the salmon balls on the baking sheet, spaced apart.
  6. Bake for 20 to 25 minutes until golden and internal temperature reaches 145°F.
  7. In a blender, combine avocados, Greek yogurt, lemon juice, salt, and pepper. Blend until smooth.
  8. Serve the salmon balls warm with the creamy avocado sauce for dipping.
