- In a mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. Refrigerate for 15 minutes.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Mix in the egg and vanilla.
- Gradually add the flour mixture to the butter-sugar blend until combined. Dough should be soft and slightly sticky.
- Scoop about 2 tablespoons of dough, flatten slightly, place 1 teaspoon of cheesecake filling in the center, and fold the dough around it. Chill shaped cookies for 20-30 minutes.
- Preheat the oven to 350°F (175°C) and bake cookies for 10-12 minutes. Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack.
- Once cooled, pipe remaining cheesecake filling on top, drizzle with caramel sauce, and sprinkle with flaky sea salt.
