  • 8 ounces Cream Cheese
  • 1/3 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Thick Caramel Sauce homemade or store-bought
For the Topping

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. Refrigerate for 15 minutes.
  2. In another bowl, whisk together the flour, baking soda, baking powder, and salt. In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Mix in the egg and vanilla.
  3. Gradually add the flour mixture to the butter-sugar blend until combined. Dough should be soft and slightly sticky.
  4. Scoop about 2 tablespoons of dough, flatten slightly, place 1 teaspoon of cheesecake filling in the center, and fold the dough around it. Chill shaped cookies for 20-30 minutes.
  5. Preheat the oven to 350°F (175°C) and bake cookies for 10-12 minutes. Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Once cooled, pipe remaining cheesecake filling on top, drizzle with caramel sauce, and sprinkle with flaky sea salt.
