Step-by-Step Instructions
  1. In a medium bowl, combine gochujang, gochugaru, soy sauce, neutral oil, honey, sugar, and sesame oil. Whisk until well blended.
  2. In a large bowl, place the diced boneless chicken thighs, sliced cabbage, minced garlic, minced ginger, and optional sliced onion. Pour in the buldak sauce and mix thoroughly. Cover and let sit at room temperature for at least 30 minutes.
  3. Heat a cast iron skillet over high heat, add the marinated chicken and vegetable mixture, and sauté for about 10 minutes until cooked through.
  4. Sprinkle shredded mozzarella cheese over the chicken. Transfer to a preheated broiler and broil for 3-5 minutes until cheese is bubbly and golden.
  5. Remove from the oven and let cool for a minute. Serve hot alongside steamed rice or in lettuce wraps.
