Preparation
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, and salt and pepper. Spread on a baking sheet and roast for 40–45 minutes, stirring halfway through.
- Heat olive oil in a skillet over medium heat, add diced onion, and sauté for about 5 minutes until soft and translucent.
- Add ground beef to the skillet, breaking it apart. Sprinkle in taco seasoning and cook for 7–10 minutes until browned and fully cooked.
Assembly
- In individual bowls, layer roasted sweet potatoes followed by ground beef, sliced avocado, and cottage cheese.
- Drizzle hot honey over each bowl and garnish as desired.
