Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, and salt and pepper. Spread on a baking sheet and roast for 40–45 minutes, stirring halfway through.
  3. Heat olive oil in a skillet over medium heat, add diced onion, and sauté for about 5 minutes until soft and translucent.
  4. Add ground beef to the skillet, breaking it apart. Sprinkle in taco seasoning and cook for 7–10 minutes until browned and fully cooked.
Assembly
  1. In individual bowls, layer roasted sweet potatoes followed by ground beef, sliced avocado, and cottage cheese.
  2. Drizzle hot honey over each bowl and garnish as desired.
