Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Cook 1 pound of Italian sausage for 6-8 minutes until browned.
  2. Add 1 diced onion and sauté for 4-5 minutes until translucent. Add 3 cloves of minced garlic, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and red pepper flakes. Cook for 1-2 minutes until garlic is fragrant.
  3. Pour in 6 cups of chicken broth and 1 can of diced tomatoes. Bring to a gentle boil, then reduce heat to maintain a simmer.
  4. Add 9 ounces of fresh cheese tortellini and let it simmer for 3-5 minutes until tender.
  5. Stir in 4 cups of chopped spinach and cook for 1-2 minutes until wilted. Season with salt and black pepper.
  6. Ladle the soup into bowls and garnish with 1/4 cup of grated Parmesan cheese.
