- Preheat your oven to 350°F (175°C).
- Pat the chicken thighs dry and season with salt and pepper.
- Heat olive oil in a Dutch oven over medium heat and sear the chicken thighs for 4-5 minutes on one side, then flip and sear for another 2 minutes.
- In a bowl, whisk together sugar, vinegar, ketchup, soy sauce, garlic powder, and onion powder. Adjust flavors as desired.
- Pour half of the sauce into the Dutch oven around the chicken, then return the chicken skin-side up and add the remaining sauce.
- Cover and bake in the oven for 45 minutes.
- Uncover and bake for another 20-25 minutes.
- Remove from oven, serve hot, and garnish with fresh parsley.
