Step-by-Step Instructions
  1. In a bowl, combine soy sauce, brown sugar, and dark soy sauce. Whisk until the sugar dissolves and set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs, browning for 4-5 minutes on each side until golden. Remove and set aside.
  3. In the same skillet, add more oil if needed and sauté minced garlic and grated ginger for about 1 minute until fragrant.
  4. Pour in chicken broth and soy sauce mixture, stirring well. Bring to a simmer and return chicken to the pan. Cover and simmer for 10-12 minutes.
  5. Stir in rice vinegar and sesame oil. Serve over rice, garnished with green onions and sesame seeds.
