Preparation Steps
- Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil or non-stick spray.
- In a large mixing bowl, combine shredded chicken, frozen mixed vegetables, and chicken broth. Add in 1 cup of milk, garlic powder, onion powder, dried thyme, salt, and black pepper. Stir everything together until well mixed.
- Pour the filling mixture into your greased baking dish, spreading it out evenly.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and ½ teaspoon of salt until incorporated. Slowly pour in the melted butter and ¾ cup of milk, stirring gently until just combined.
- Using a spoon or small ice cream scoop, drop spoonfuls of the batter over the chicken mixture, covering as much of the surface area as possible.
- Place your baking dish in the preheated oven and bake for 30–35 minutes, until the topping is golden-brown and firm.
- Remove from the oven and let it cool for about 5 minutes before serving.
