Preparation Steps
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil or non-stick spray.
  2. In a large mixing bowl, combine shredded chicken, frozen mixed vegetables, and chicken broth. Add in 1 cup of milk, garlic powder, onion powder, dried thyme, salt, and black pepper. Stir everything together until well mixed.
  3. Pour the filling mixture into your greased baking dish, spreading it out evenly.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and ½ teaspoon of salt until incorporated. Slowly pour in the melted butter and ¾ cup of milk, stirring gently until just combined.
  5. Using a spoon or small ice cream scoop, drop spoonfuls of the batter over the chicken mixture, covering as much of the surface area as possible.
  6. Place your baking dish in the preheated oven and bake for 30–35 minutes, until the topping is golden-brown and firm.
  7. Remove from the oven and let it cool for about 5 minutes before serving.
