- In a large skillet, heat 1 tablespoon of olive oil over medium heat for about 1 minute. Add the diced onion and sauté for 3–4 minutes until translucent.
- Add the sliced chicken sausage and cook for 5–7 minutes, stirring occasionally until browned.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Pour in 3 cups of low-sodium chicken broth and bring to a gentle boil. Stir in the orzo and 1 tablespoon of Italian seasoning.
- Reduce heat to low, cover the skillet, and let it simmer for about 10 minutes, stirring occasionally.
- Stir in the broccoli florets and cover the skillet again, cooking for an additional 5 minutes.
- Remove from heat, season with salt and pepper, and mix in ½ cup of grated Parmesan cheese until melted.
- Serve warm, garnished with freshly chopped parsley.
