Step-by-Step Instructions
  1. Thinly slice the Honeycrisp apples and yellow onion, keeping the skins intact for texture.
  2. Mince the garlic cloves to enhance the aromatic profile.
  3. In a small bowl, whisk together apple cider, Dijon mustard, apple cider vinegar, brown sugar, salt, and black pepper.
  4. Drizzle olive oil at the bottom of the crockpot, then add the sliced onions and apples.
  5. Place chicken thighs on top of the apple and onion mixture and sprinkle with fresh rosemary and thyme.
  6. Pour the prepared apple cider mixture over the chicken thighs, coating each piece.
  7. Sprinkle minced garlic evenly on top of the chicken thighs.
  8. Cover and cook on low for 6 hours or high for 3 hours.
  9. Serve the chicken hot, spooning the sauce and apple mixture over each piece.
