- Begin by cutting your sirloin or ribeye steak into bite-sized cubes and pat them dry with paper towels for optimal browning. Generously season with salt and black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the steak cubes in batches and sear for 2-3 minutes on each side.
- In the same skillet, reduce the heat to medium, add 3 tablespoons of unsalted butter, and toss in the minced garlic. Sauté for about 30 seconds, then return the steak to coat in the garlic butter.
- In a separate saucepan, melt 1 tablespoon of unsalted butter over medium heat. Add 2 minced cloves of garlic and sauté for about 30 seconds. Pour in 1 cup of heavy cream and bring to a gentle simmer.
