- In a large skillet, arrange the bacon strips in one layer and cook over medium heat for about 5-7 minutes, turning occasionally, until crispy and golden brown.
- While the bacon drains, slice the ripe tomatoes into thin rounds and drizzle them with olive oil, red wine vinegar, salt and black pepper, letting rest for 5 minutes.
- In a mixing bowl, combine one tablespoon of the seasoned tomato mixture with mayonnaise to create the secret sauce.
- Wrap tortillas in a damp paper towel and heat them in the microwave for about 10-15 seconds until soft.
- On each warmed tortilla, spread a generous layer of the secret sauce, then layer fresh lettuce, crispy bacon, and the marinated tomato slices.
- Roll each tortilla tightly and allow to rest for 2-3 minutes seam-side down.
- Using a sharp knife, cut each wrap diagonally in half to reveal the layers.
