- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish with nonstick spray.
- Cook 8 slices of bacon in a skillet over medium-low heat for 8-10 minutes until crispy. Drain and crumble bacon.
- Sauté 1 diced yellow onion in the reserved bacon grease for about 5 minutes until translucent. Add 8 ounces of sliced mushrooms and cook until golden brown, about 5-7 minutes. Finish with 2 cloves of minced garlic and cook for 1 minute.
- In a large mixing bowl, combine the sautéed mixture with 1 can of undiluted cream of mushroom soup, crumbled bacon, and ½ cup of milk. Add 1 cup of shredded Monterey Jack cheese and mix well.
- Fold in 2 cans of drained cut green beans gently to coat them in the mixture.
- Pour the mixture into the prepared baking dish, top with 1 cup of French fried onions, and bake uncovered for 30-35 minutes until bubbly and the top is golden brown.

Notes
For extra crunch, add more fried onions halfway through baking. Refrigerate before baking to maintain crispy texture if prepared ahead.
