Ingredients

  • 8 grams Dried Shiitake Mushrooms soak overnight or in hot water until soft
  • 1 tablespoon Ginger finely minced
  • 1 medium Carrot finely diced
  • 100 grams Bamboo Shoots finely diced
  • 2 pieces Scallions mostly green parts, finely chopped
  • 2 tablespoons Cilantro Stems substitute with chives if needed
For Cooking
  • 2 tablespoons Vegetable Oil can substitute with any neutral oil
  • 1 tablespoon Shaoxing Wine omit for an alcohol-free version
  • 1 tablespoon Light Soy Sauce low-sodium version available
  • 1 tablespoon Vegetarian Oyster Sauce regular oyster sauce can replace if not vegetarian
For Wrapping
  • 10 pieces Hong-Kong-Style Yellow Dumpling Wrappers substitute with tofu skin or napa cabbage leaves if unavailable

Method
 

Step-by-Step Instructions for Prosperity Money Bag Dumplings
  1. Soak the dried shiitake mushrooms in hot water for about 30 minutes, or overnight for best results. Once softened, drain and finely dice the mushrooms.
  2. In a wok, heat 2 tablespoons of vegetable oil over medium-low heat. Add minced ginger and finely diced carrot, sauté for about 1 minute.
  3. Increase the heat to medium-high and add the diced shiitake mushrooms and finely diced bamboo shoots. Stir-fry for 2-3 minutes.
  4. Pour in 1 tablespoon of Shaoxing wine, 1 tablespoon of light soy sauce, and 1 tablespoon of vegetarian oyster sauce. Cook for an additional 2 minutes.
  5. Remove from heat and fold in the chopped scallions. Allow the filling to cool completely.
  6. Blanch the cilantro stems in boiling water for about 10 seconds and transfer to cold water. Drain.
  7. Roll the dumpling wrappers out to about 4 inches in diameter. Place 1 tablespoon of the cooled filling in the center of each wrapper.
  8. Pinch the edges of the wrappers closed, leaving the top open for an authentic money bag look. Tie with blanched cilantro stems.
  9. Prepare a bamboo steamer lined with parchment paper and steam the dumplings for approximately 3 minutes.
  10. Serve hot with soy sauce or a vinegar-based dipping sauce.
