  • 2 tablespoons Lime Juice Lemon juice is a suitable substitute.
For the Salsa
  • 1 cup Pineapple Fresh is recommended.
  • 1/4 cup Red Onion Green onions or shallots can substitute.
  • 1/4 cup Cilantro Use parsley if cilantro is not preferred.
For Assembly
  • 8 pieces Tortillas Corn or flour tortillas can be used.
  • 1 piece Jalapeños Optional for added kick.
  • 1 piece Avocado Guacamole can substitute.

Method
 

Preparation Steps
  1. In a medium bowl, whisk together chili powder, cumin, paprika, lime juice, and a pinch of salt. Add the chicken thighs and marinate for at least 15 minutes.
  2. Heat a large skillet over medium heat and add oil. Cook the marinated chicken thighs for 7-10 minutes on each side until golden brown. Let the chicken rest.
  3. Prepare the pineapple salsa by mixing cubed pineapple, diced red onion, chopped cilantro, and lime juice in a separate bowl.
  4. Slice the rested chicken into thin strips.
  5. Warm tortillas in the skillet for 30 seconds on each side or in the microwave.
  6. Assemble tacos by placing chicken on tortillas, adding salsa, and optional toppings like jalapeños or avocado, then fold and serve.
