  • 1 tbsp Gochugaru Korean chili pepper flakes
For the Quick Pickled Cucumbers
  • 1 large Cucumber (for pickling) Slice thinly
  • ½ cup Rice Vinegar
  • 2 tbsp Sugar Can substitute with honey
For Serving
  • 6 units Tortillas (soft flour or corn) Use corn for a gluten-free option
  • 1 tbsp Sesame Oil Stir in at the end for flavor

Step by Step Instructions
  1. In a large bowl, combine the ground beef, soy sauce, minced garlic, grated ginger, and gochugaru. Mix well until even.
  2. Transfer this mixture into your slow cooker, ensuring it's spread evenly for proper cooking.
  3. Cover the slow cooker and set it to low for 4-5 hours. Check for doneness to avoid dryness.
  4. While it cooks, slice cucumbers thinly. In a bowl, mix with rice vinegar, sugar, and salt. Let sit in the fridge for 30 minutes.
  5. Once cooking time is complete, let the beef rest for 10 minutes. Warm tortillas, assemble tacos, and top with pickled cucumbers.
