Salad
  • 4 cups Broccoli Florets Lightly blanched for a tender twist, if desired.
  • 6 slices Crispy Cooked Bacon Turkey bacon can be used for a lighter option.
  • ½ cup Chopped Red Onion Green onions can be used as a milder substitution.
  • ½ cup Sweetened Dried Cranberries Raisins or dried cherries can be substituted.
  • ¼ cup Sliced Almonds Sunflower seeds or walnuts can be used instead.

Method
 

Preparation
  1. In a small mixing bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of granulated sugar, 2 tablespoons of apple cider vinegar, and ¼ teaspoon of fresh ground black pepper until smooth. Set aside.
  2. Cut the broccoli into bite-sized florets, rinsing under cold water and draining any excess. Blanch for 1-2 minutes for a tender texture if preferred.
  3. Preheat your oven to 375°F, arrange bacon on a baking sheet, and bake for 15-17 minutes. Allow to cool before chopping.
  4. Combine broccoli, bacon, red onion, dried cranberries, and sliced almonds in a large bowl and mix gently.
  5. Drizzle the dressing over the mixture, toss gently to coat, and chill for 1-2 hours before serving.
  6. Before serving, give the salad a gentle toss again to mix everything well.
