  • 4 medium Zucchini

Step-by-Step Instructions for Stuffed Zucchini
  1. Preheat your oven to 375°F (190°C). Slice the zucchini in half lengthwise and scoop out the seeds.
  2. In a skillet, heat olive oil over medium heat. Add ground meat and cook until browned, about 5-7 minutes.
  3. Stir in diced tomatoes and Italian herbs, simmer for 3-5 minutes until heated through.
  4. Stuff each zucchini half with the cooked filling, pressing down gently.
  5. Sprinkle cheese over the tops of the stuffed zucchinis.
  6. Bake for 25-30 minutes until zucchini is tender and cheese is bubbly.
  7. Let cool for a few minutes before serving warm.
