- Preheat your oven to 375°F (190°C). Slice the zucchini in half lengthwise and scoop out the seeds.
- In a skillet, heat olive oil over medium heat. Add ground meat and cook until browned, about 5-7 minutes.
- Stir in diced tomatoes and Italian herbs, simmer for 3-5 minutes until heated through.
- Stuff each zucchini half with the cooked filling, pressing down gently.
