  • 1 medium Red Capsicum/Bell Pepper any color
  • 3 large Eggs or flax eggs for vegan option
  • 1 cup Milk dairy-free alternatives work
  • 1 cup Self-Raising Flour or mix all-purpose flour with baking powder (1 cup flour + 2 tsp baking powder)
  • 1 cup Grated Cheddar Cheese or dairy-free cheese
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F). Line a 9 x 9 inch baking dish with baking paper.
  2. Grate the zucchini and carrot, sprinkle salt over them, and let sit for about 10 minutes. Squeeze out excess moisture.
  3. Heat olive oil in a frying pan and cook diced onion and chopped bacon until golden and crispy, about 5-7 minutes. Set aside to cool.
  4. In a mixing bowl, combine the drained zucchini and carrot with red capsicum, cooled onion and bacon, grated cheddar cheese, self-raising flour, eggs, milk, salt, and pepper. Mix well.
  5. Pour the mixture into the prepared baking dish, sprinkle cheese on top, and bake for 35-40 minutes until firm and golden.
  6. Let cool for about 10 minutes, then slice into squares. Serve warm or cool completely for meal prep.
