Preparation Steps
- Preheat your oven to 180°C (350°F). Line a 9 x 9 inch baking dish with baking paper.
- Grate the zucchini and carrot, sprinkle salt over them, and let sit for about 10 minutes. Squeeze out excess moisture.
- Heat olive oil in a frying pan and cook diced onion and chopped bacon until golden and crispy, about 5-7 minutes. Set aside to cool.
- In a mixing bowl, combine the drained zucchini and carrot with red capsicum, cooled onion and bacon, grated cheddar cheese, self-raising flour, eggs, milk, salt, and pepper. Mix well.
- Pour the mixture into the prepared baking dish, sprinkle cheese on top, and bake for 35-40 minutes until firm and golden.
- Let cool for about 10 minutes, then slice into squares. Serve warm or cool completely for meal prep.
