- Grease the inside of your slow cooker with nonstick spray or a drizzle of olive oil.
- Arrange the boneless, skinless chicken breasts or thighs in a single layer in the slow cooker.
- In a mixing bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and black pepper until smooth.
- Pour the sauce evenly over the chicken.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
- If desired, remove chicken and mix cornstarch with water, then stir into the remaining sauce to thicken.
- Return cooked chicken to the slow cooker and toss in the sauce.
- Garnish with fresh parsley and serve over rice or with roasted vegetables.
