Step-by-Step Instructions
  1. Grease the inside of your slow cooker with nonstick spray or a drizzle of olive oil.
  2. Arrange the boneless, skinless chicken breasts or thighs in a single layer in the slow cooker.
  3. In a mixing bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and black pepper until smooth.
  4. Pour the sauce evenly over the chicken.
  5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
  6. If desired, remove chicken and mix cornstarch with water, then stir into the remaining sauce to thicken.
  7. Return cooked chicken to the slow cooker and toss in the sauce.
  8. Garnish with fresh parsley and serve over rice or with roasted vegetables.
