Step-by-Step Instructions
  1. Prepare the Chicken Wings: Pat the chicken wings dry with paper towels. In a large bowl, combine wings with olive oil, seasoning, and toss until evenly coated.
  2. Smoke the Chicken Wings: Preheat smoker to 225°F using hickory or cherry wood. Arrange wings on smoker racks and smoke for 60 to 75 minutes until skin appears taut.
  3. Make the Hot Honey Sauce: Melt butter in a saucepan over low heat. Stir in honey, hot sauce, vinegar, and red pepper flakes. Simmer for 2-3 minutes.
  4. Crisp the Wings: Increase smoker temperature to 375°F and cook wings for an additional 15-20 minutes until golden-brown.
  5. Toss in Hot Honey Sauce: Remove wings and toss in prepared hot honey sauce until evenly coated.
